Cheeseburger Hotdish

1 can cream of mushroom soup

1 can condensed cheddar cheese soup

1 lb. hamburger

1 bag French fries

In a 9 x 13 inch pan, break the hamburger into pieces and place along the bottom of the pan. Add the soups on top of the hamburger. Place the French fries on top. Cook at 350 degrees for 1 hour. Let sit for 10 minutes. Season with salt and pep-per to taste.

Doritos Chicken Salad

4 chicken breasts, cooked and cubed

1 lb. bag of shredded coleslaw mix

2 c. shredded Cheddar cheese

1 large tomato, diced

1 - 16 oz. bottle Western dressing

1 - 12 oz. bag Cool Ranch Doritos or taco favored

Mix the chicken, coleslaw mix, cheese, tomato and dressing together. Just before serving, crush the Doritos and mix into the salad.

Easy Chicken Enchiladas

3 cans condensed cream of chicken soup

1 1/2 c. low-fat milk

3 small cans drained mild diced green chilies

4 c. chopped, cooked chicken

flour tortillas

shredded low-fat cheese

In a large saucepan, add the soup, milk and green chilies. Add the chicken. Mix well and simmer until heated through and smooth. Line an oiled 9 x 13 inch pan with flour tortillas and spoon the chicken mix over the tortillas. Top with cheese and repeat the layers until the pan is full. Bake at 350 degrees until the cheese is melted and the pan is hot and bubbling. Allow the pan to set for about 10 minutes once it is out of the oven. Cut into squares and serve.

Salsa Chicken

4 boneless, skinless chicken breasts or thighs

1 - 16 oz. jar salsa, any kind or flavor

1 c. shredded sharp cheddar cheese

white or brown rice

Spray a 9 x 13 inch baking dish with cooking spray. Preheat the oven to 350 degrees. Generously salt and pepper both sides of chicken breasts and place in baking dish. Spread salsa on top of chicken. Bake, uncovered for 30 to 40 minutes or until the chicken is no longer pink in the middle. Sprinkle cheese on top and bake for 5 minutes more or until the cheese is melted. Serve over rice.

Potato Sausage Casserole

1 lb. hamburger

4 to 5 c. raw ground potatoes

2 tsp. ground onion

2 tsp. salt

1/4 tsp. pepper

1/2 tsp. all spice

1/8 tsp. dry garlic

Mix all the ingredients. Put into a greased casserole or loaf pan. Place the pan in water. Cover all with foil and let steam into the oven for 90 minutes at 350 degrees. Uncover for the last 20 minutes to brown.

Baked Cheese Ravioli

1 pkg. frozen cheese ravioli

1 jar tomato and basil sauce

12 slices of thin, sliced pepperoni - optional

8 oz. pkg. shredded mozzarella cheese

Cook the frozen cheese ravioli in boiling water until they float to the top. Spray the pan with cooking spray. Pour half the jar of sauce in the pan and then top with cooked, drained ravioli. Add the remainder of the sauce and gently fold in until the pasta is evenly covered. Place the pepperoni on top. Sprinkle with cheese. Bake for 30 minutes at 350 degrees or until the cheese is golden brown and the sauce is bubbling.

Elizabeth's Favorite Pasta Hotdish

1 lb. ground meat (beef, chicken, lamb, pork and turkey)

1 onion, chopped

1 to 2 gloves garlic, optional

1 - 26 1/2 oz. can spaghetti sauce

2 c. rainbow corkscrew pasta, uncooked

1 c. cheddar cheese or cheese of your choice

Preheat the oven to 350 degrees. Cook the pasta according to package directions. Brown the meat in a frying pan or micro-wave with onion and garlic. Stir in the spaghetti sauce. Add the cooked pasta and 1/2 cup of cheese. Turn into a 2-quart baking dish or casserole dish. Sprinkle with remaining cheese. Bake for 15 to 20 minutes. Serves 5.

Simple and Delicious French Fry Casserole

1 lb. ground beef

1 can cheddar cheese soup

1 can golden mushroom soup

1 medium pkg. French fries

In an 8 x 8 inch pan, press the beef on the bottom and spread it out evenly. Mix the soups and spread on the beef layer. Add the frozen fries. Bake at 350 degrees for 1 hour or until the fries are golden brown.

Baked Ziti

1 1/2 lbs. ground beef, browned

1 small white onion

1 - 8 oz. pkg. ziti pasta, cooked and drained

1 - 28 oz. can spaghetti sauce

2 1/2 c. mozzarella cheese, shredded

1 tsp. garlic salt

Chop the onion into fine small pieces and brown with the ground beef. Sprinkle on garlic salt. Drain. Add ziti and spaghetti sauce; mix well. Spoon in to a greased 9 x 13 inch pan. Top with cheese. Cover and bake at 350 degrees for 55 minutes.

Queso Taco Casserole

1 lb. ground beef

1 - 8 oz. bottle taco sauce

3/4 c. water

1 pkg. taco seasoning mix

10 taco shells, broken and divided

2 c. shredded cheddar cheese, divided

Preheat the oven to 350 degrees. Grease an 11 x 7 inch baking dish. Brown the ground beef in a large skillet and drain. Stir in taco sauce, water and seasoning mix; bring to a boil. Reduce heat to low. Cook, stirring occasionally for 3 to 4 minutes. Layer half of broken shells on bottom of dish. Cover with half the meat mixture, sprinkle with 1 cup of cheese and repeat with remaining ingredients. Bake for 25 to 30 minutes or until bubbly and cheese is melted. Serves 6 to 8.

Heart Healthy Spaghetti

1 lb. hamburger

1/2 onion, diced

1 - 32 oz. jar spaghetti sauce

2 tsp. minced garlic

3 tsp. Italian seasoning

2 yellow squash or zucchini, cut into 1/2 inch slices

Brown the hamburger with the onion; drain off fat. Add the sauce, garlic and seasoning. Cook over low heat, stirring occa-sionally. Steam the squash until tender. Serve the spaghetti sauce over the squash instead of noodles.

Jell-o Salad

2 c. boiling water

1 small box instant lemon pudding

1 small box lemon Jell-o

4 oz. Cool Whip

1 can fruit cocktail, drained

Mix the water, pudding and Jell-o together. Let set for 1 hour. Add the Cool whip and fruit cocktail mix. Serve.
