Business Brief: Locally Laid is growing
Cloquet Minnesota 122 Avenue C 55720

Locally Laid, a pasture-based egg operation in Wrenshall, is expanding.

Just a year after its eggs first landed on shelves at Whole Foods Co-op and Homecroft Foods in Duluth, Locally Laid is expanding in the Twin Cities area.

This fall, the eggs from chickens that forage on pasture grasses will be sold at four cooperatives in the Twin Cities area: East Side Food, the Wedge Community, Seward Community and Center City Market. They'll also be served at Birchwood Cafe and Modern Times Cafe in Minneapolis, the company announced.

In addition, Upper Lakes Foods, a wholesale food service based in Cloquet, will become a distributor of Locally Laid eggs.

The fresh eggs distributed in the Twin Cities will be supplied by a farmer in Kalona, Iowa, who converted his indoor, cage-free operation of 4,000 chickens to a pasture-based one to become a Locally Laid operation. The hens go outside to exercise and forage for grasses, which produces healthier and tastier eggs, said company founder Jason Amundsen.

The company plans to continue to take on partner farms with the goal of increasing its distribution area to two more states by early 2014, according to a news release.
